Varutharachya Sambar with Steamed Rice in Microwave

Servings: 4 portions
Sambar Ingredients:
- ½ cup cooked toor dal
- ¼ tsp turmeric powder
- 2 green chillies
- 12- 15 madras onions (shallots)
- 2 small potatoes
- 1 drumstick
- 2 cups pumpkin
- 2 small carrots
- 1 medium tomato
- 5-6 okra (shallow fried)
- 1 sprig curry leafs
- Salt – to taste
( All sambar Veggies can be boiled at boiled at 100% micro power level for 08 mins)
To roast and grind:
- 1 tsp coconut oil
- ¼ tsp fenugreek seeds
- 1 tsp split urad dal
- 1 tsp chana dal
- ¼ tsp hing
- 3 tbsp coriander seeds
- 2 slit madras onions
- A few – curry leafs
- ½ cups Browned grated coconut
For tempering:
- 2 tsp coconut oil
- ½ tsp mustard seeds
- 2 dry red chillies
- 1 sprig curry leafs
How to Make Sambar in Microwave Step by Step:
Step 1: Shallow fry the dry spices in microwave safe bowl for 3 mins at 100% micro power level , cool and grind it finely with no or minimum water.
Step 2: In a microwave safe glass bowl add oil and grinded masala, Cook for 03 mins at 100% micro power level, now add boiled veggies, mix well & continue cooking for 3 mins at 100% micro power level.
Step 3: Now add the cooked dal stir well continue for 3 mins at 100% micro power level.
Step 4: Finally, add the seasoning and fresh chopped coriander & continue to cook for 4 mins at 100% micro power level.
Step 5: Serve hot with steamed rice.
