Ingredients:
For coffee sponge:
- 2 cups all purpose flour
- 1 ½ tsp baking powder
- 1 tsp baking soda
- 1/4th cup granulated sugar
- 3/4th cup butter
- ½ cup condensed milk
- 5 tsp instant coffee powder
- ½ tsp vanilla essence
- 1 cup butter milk
For Decoration:
- 1 1/2 cups heavy whipping cream
- 250 gms cream cheese
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups cold espresso
- 01 tbsp Instant coffee + 150 ml warm water
- Cocoa powder for dusting the top
Preparation:
- Sieve together all purpose flour, baking powder, baking soda and keep aside.
- In the mean while pre heat the microwave oven on convection for 160*C and press start.
- In a bowl cream together condensed milk, butter, and sugar until it’s well combined.
- Add in vanilla, instant coffee and mix until coffee blends well. Now add the dry ingredients in 4 batches alternating with butter milk. Do not over mix, just cut and fold, you can use a little more butter milk if mixture is too thick,
- Line the baking tin (use 9 inch cake tin) fill the batter in the tin till it’s just 3/4th , bake in the pre heated oven on 160*C for 25 mins, place the cake tin for baking over a low rack.
- Once the Coffee flavor sponge is ready and is completely cooled down cut them into flat fingers and place aside.
- Add whipping cream to a mixing bowl and beat on medium speed with electric mixers (or use a stand mixer). Slowly add sugar and vanilla and continue to beat until stiff peaks. Add mascarpone cheese and mix just until combined. Set aside.
- Add coffee concentrate to a shallow bowl. Dip the flat fingers in the coffee (Don't soak them--just quickly dip them on both sides to get them wet) and lay them in a single layer on the bottom of an 8x8'' or similar size pan.
- Smooth half of the Cream cheese mixture over the top. Add another layer of dipped flat fingers. Smooth remaining cream cheese over the top.
- Dust cocoa powder generously over the top . Refrigerate for at least 3-4 hours or up to overnight before serving.
