Tacos in Microwave

Servings:  4 servings

 

Ingredients:

  • 15 gms thinly sliced onions
  • 3 tbsp avocado paste
  • 4 tbsp cooked kidney beans
  • 2 taco shells

 

Recommended Toppings:

  • 15 gms sliced tomatoes
  • 15 gms sliced onions
  • 15 gms sliced cucumber
  • 15 gms shredded green cabbage
  • 2 tbsp crumbled cheddar cheese
  • 2 tbsp mozzarella cheese
  • 1 tbsp chopped fresh coriander
  • 1 lime wedge
  • 2 tbsp fresh cream + 1 tbsp lemon juice

 

Preparation: 

  1. Fill the taco shell with cooked beans. Top it with avocado paste and onions. Finish the tacos with remaining vegetables topping.
  2. Top it with cheese and place in the microwave oven at 180°C on high rack for 4 mins till cheese browns lightly and serve immediately with and sour cream (cream + lemon juice).
