Tacos in Microwave

Servings: 4 servings
Ingredients:
- 15 gms thinly sliced onions
- 3 tbsp avocado paste
- 4 tbsp cooked kidney beans
- 2 taco shells
Recommended Toppings:
- 15 gms sliced tomatoes
- 15 gms sliced onions
- 15 gms sliced cucumber
- 15 gms shredded green cabbage
- 2 tbsp crumbled cheddar cheese
- 2 tbsp mozzarella cheese
- 1 tbsp chopped fresh coriander
- 1 lime wedge
- 2 tbsp fresh cream + 1 tbsp lemon juice
Preparation:
- Fill the taco shell with cooked beans. Top it with avocado paste and onions. Finish the tacos with remaining vegetables topping.
- Top it with cheese and place in the microwave oven at 180°C on high rack for 4 mins till cheese browns lightly and serve immediately with and sour cream (cream + lemon juice).
