The craving for Pani Puri is so real and unpredictable right? For all your Pani Puri cravings, here's an easy microwave recipe for you to try!

Prep time: 40 mins

Cooking time: 06 mins 30 secs

Servings: 04 servings

Ingredients:

  • 1 pack ready to make panipuri/golgappas.
  • 3 medium sized, diced potatoes
  • 1 tsp salt 
  • 1 tsp red chilli powder
  • 1 tsp roasted jeera
  • 100 gms sprouted boiled moong
  • 1 tsp chopped ginger
  • 1 tsp chopped green chillies
  • 200 ml imli chutney 
  • 100 gms yellow sev 
  • 100 gms mint leaves
  • 100 gms coriander leaves
  • 4 tbsp jaggery powder
  • 1 green chilli
  • ½ inch ginger
  • 2 tbsp tamarind paste

Preparation:

  1. Place dry ready to fry golgappe/pani puri on glass turn table lined with a napkin or paper towel. Microwave for 30 seconds on 100% micro power level. Open and check. Then subsequently microwave in 5 seconds checking and transferring those that are done.

For the filling:

  1. Boil potatoes for 8 mins in a microwave safe glass bowl at 100% micro power level with water just to cover potato dices. Now mash potatoes sprinkle with salt, red chilli powder and jeera. Cook moong sprouts with 100 ml of water along with some jeera, ginger and green chillies at 100% micro power level for 5 mins.

For the pani:

  1. Grind together 06 ice cubes, mint leaves, coriander leaves, ½ inch ginger, 4 tbsp of tamrind pulp, 4 tbsp of jaggery powder, ½ tsp black salt, 1 small green chilli, into a smooth paste.  Add ½ l of cold  water and keep aside in refrigerator  for chilling.

For assembling:

  1. Crack open 1 puri from top add a spoonful of mashed potato, add sprouted moong mixture, imli chutney, and yellow sev and the prepared pani.  Serve immediately.
