Kerala Style Malabari Vegetable Curry in Microwave

Yes it’s possible … in an IFB Microwave Oven!
Mouth-watering Kerala-style coconut-flavoured stew with a spectrum of flavours and colours. A perfect comfort food!
Preparation time: 15 min
Cooking time: 15 min
Servings: 4 portions
Ingredients:
- 3 tbsp vegetable oil
- 6 cloves
- 4 cm cinnamon stick
- 1 large white onion, thinly sliced
- 1 green chilli, slit lengthwise
- 2 inch ginger, finely chopped
- 12 curry leaves
- Pinch of turmeric powder
- 1 medium tomato, finely chopped
- 150 gm carrot, diced into cubes
- 150 gm green beans, cut into three
- 200 gm cauliflower, small florets
- 200 ml water
- 250 ml coconut milk
- ½ tsp coarsely ground black pepper
- Salt to taste
- Coriander for garnish
Preparation:
1.Heat oil in a microwave-safe glass bowl; add cloves and cinnamon and heat at 100% micropower level for 2 min.
2.Add the onions and heat at 100% micropower level for 2 min, as they begin to soften.
3.Now add the green chilli, ginger, half the curry leaves and turmeric powder. Stir well and heat at 100% micropower level for 2 min.
4.Add the chopped tomatoes and heat at 100% micropower level for 2 mins as they begin to soften, followed by carrots, cauliflower and green beans. Stir well and heat at 100% micropower level for 2 min.
5.Now add water and season to taste; heat at 100% micropower level for 2 min.
6.Add coconut milk and heat at 40% micropower level for 3 min.
7.Add black pepper and remaining curry leaves. Serve warm garnished with coriander along with rice or bread of your choice.
