Kerala Idiyappam in Microwave

Extremely nutritious, steamed finger millet, these Indian-style string hoppers are a traditional Kerala treat.
Preparation time: 15 min
Cooking time: 18 min
Serves: 4 portions
Ingredients:
- ½ cup plain rice flour
- ½ cup ragi flour
- 1.5 cup water
- 1 tsp coconut
- ½ tsp salt
Preparation:
1.In a microwave-safe glass bowl, add rice flour and heat it for 2 min at 60% micropower level. (Avoid this step if rice flour is pre-roasted).
2.In another bowl, heat water for 5 min at 100% micropower level. Once heated, add coconut oil and salt. Stir well and add the rice and ragi flours. Mix thoroughly to avoid lumps.
3.Place the mixture in the microwave and heat for 2 min at 60% micropower level.
4.Knead the dough well, grease the idiyappam mold with coconut oil and fill with dough. Heat the idli steamer with water in the base for 6 min at 100% micropower level.
5.Press the ragi idiyappam on idli slots. Transfer to a steamer and steam for 3 min at 100% micropower level.
6.After 5 min of steaming, wait for 2 min before removing the ragi idiyappam.
