Navratri Special : Gajar Halwa Tiramisu

Ingredients:

 

For Gajar Halwa:

  • 500 gms delhi carrots
  • 1 tin condensed milk
  • 1 tsp green cardamom, powdered
  • 25 gms almonds, chopped
  • 25 gms raisins
  • 2 tbsps ghee
  • 150 ml whipping cream
  • 150 gms cream cheese
  • 100 gms vanilla custard
  • Cocoa powder for dusting

 

 

For Eggless Lady Finger:

  • 180 gms all purpose flour
  • 150 gms powdered sugar
  • ½ tsp baking soda
  • ½ tsp baking powder
  • Pinch of salt
  • 200 ml thick yogurt
  • 40 ml condensed milk
  • 80 gms butter
  • ½ tsp cardamom powder
  • Milk, as needed to thin the batter

 

 

For Rose Syrup:

  • 50 gms sugar
  • 150 ml water
  • ½ tsp rose water
  • (Heat above ingredients for syrup at 100% micro power level for 10 mins)

 

 

Preparation:

  1. Place grated carrots and condensed milk in a microwave safe glass bowl, mix well, cover with cling wrap and cook on 100% micro power level for 5 mins, stirring once
  2. Cover with cling wrap and continue cooking the carrot mixture, at 50% micro power level for 10 mins, stirring twice
  3. Add the cardamom, ghee, half the almonds, raisins and cook for 2 mins at 100% micro power level
  4. Let the mixture cool down completely and blend gajar halwa to a smooth paste
  5. In a glass bowl add cream cheese, whipping cream, custard and gajar halwa paste
  6. Combine well with a spatula and keep this mixture in the ref for chilling

 

 

To Make Lady Finger:

  1. Preheat convection mode on 160⁰C
  2. Combine all ingredients in a glass bowl, mix well and ensure no lumps
  3. Transfer the batter in a piping bag with a sabayon nozzle. Pipe lady fingers on a greased & lined baking tray
  4. Bake on 3rd rack position for 25 mins until golden. Once done, cool completely

 

 

For The Assembly:

  1. Cover the base of a collapsible square cake tin with cling wrap and foil paper
  2. Arrange lady fingers and moisten them with rose syrup. Pour chilled gajar halwa mixture and spread to even the surface
  3. Repeat the layering process with lady fingers, syrup and gajar halwa mixture
  4. Garnish the top gajar halwa cream cheese layer with dusted cocoa powder, rose petals and nuts
  5. Chill gajar halwa tiramisu for 3 hours & serve chilled
