Jelly Bean Cookies in Microwave

Cook temp: 160°C

Cook time: 12 mins                                     

Ingredients:

• 1/2 cup unsalted butter
• 3/4 cup castor sugar
• 1 egg
• 2 tbsp milk
• 1 tsp vanilla extract
• 1-1/2 cups all-purpose flour
• 1-1/4 tsp baking powder
• 1/2 tsp salt
• 3/4 cup small jelly beans

Preparation:

1. Preheat oven to 160°C.
2. In a large bowl, cream shortening and sugar until blended. Beat in egg, milk and vanilla. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture. Stir in jelly beans.
3. Drop dough by tablespoonfuls 1-1/2 inches apart onto greased or parchment-lined baking sheets.
4. Bake 12 minutes or until edges are light golden.
5. Let the cookies cool completely before filling them in a jar.
