International Egg Day special: Dimer Paturi

International Egg Day gets a local twist with Bengali Dimer Paturi recipe (Mustard Egg Cooked in Banana Leaf).

Servings: 4 portions
Ingredients:
- 4 eggs, boiled and peeled
- 3 tbsp mustard paste
- 2 tbsp poppy seeds paste
- 3 tbsp mustard oil
- 2 onions, finely sliced
- 3 tbsp grated coconut
- Salt to taste
- ½ tsp turmeric powder
- 1 tbsp green chilli paste
- 1 clean banana leaf
- Cotton thread
Preparation:
1.In a bowl, put poppy seed paste, mustard seed paste, grated coconut, onion, green chilli paste, salt and turmeric; add mustard oil and mix well. Add the boiled eggs into the spice mixture and mix well. Keep aside for 1 hour.
2.Prepare the banana leaves by washing and cleaning them. Dry completely with a kitchen towel. Cut the leaf into small square shapes to accommodate egg.
3.Heat the leaf pieces until they become glossy in the microwave oven on grill mode for 3 min. Set aside. Grease them with a few drops of mustard oil and place one steak of eggs on each leaf, making sure both sides of the eggs are coated with spices. Tie the egg parcels.
4.Grease the magic tawa with mustard oil and preheat on H2 mode of Oil Free Cooking programme for 2 min. Once preheated, place the egg parcels on the hot tawa and cook them on H2 mode for 13 min.
5.All parcels will shrink slightly and turn pale greenish during the cooking process.
6.Serve Dimer Paturi with steamed rice.
