Mango Bhapa Doi

Ingredients:
- 500 gms Curd
- 180 gms Condensed milk
- 120 gms Mango puree/Pulp
- 250 gms Fresh cream
- ½ tsp Cardamom powder
Preparation:
- Hang the curd in a muslin cloth, tie it and place it in a sieve. Refrigerate the hung curd to avoid souring.
- Allow it to rest at least 2-3 hours until a solid mass of milk is derived. Approx 25 gms in weight.
- Preheat the oven at 180°
- In a glass bowl combine the hung curd, condensed milk, mango puree, fresh cream, cardamom powder and whisk it well.
- Transfer the mixture into a round earthen bowl, flatten with a spoon and cover with aluminum foil.
- Place a deep tray in the oven and add hot water sufficient to fill the tray.
- Place the bhapa doi earthen in the center of the tray and bake for 35 mins (refill the water in case required).
- Once done and set well, allow the mango bhapa doi to cool.
- Top it with mango puree/pulp and some chopped mango cubes. Serve chilled.
