Lehsuni Khameeri Roti

Ingredients:
For Khameeri Roti:
- 125 gms All-purpose flour
- 5 gms Yeast
- 5 gms Salt
- 5 gms Sugar
- 5 gms Butter
- 80 ml Lukewarm water
Topping:
- 30 gms Garlic cloves (Chopped)
- 100 gms Grated Mozzarella
- 30 gms Chopped Coriander
- 100 gms Butter
- Water wash
Preparation:
- Preheat the oven at 220°C with the baking tray.
- In a clean bowl mix all ingredients for khameeri roti and knead well.
- Leave the dough for resting covered with damp cloth and let it rise for 35 mins. Post resting, knead the dough again.
- Pluck out 6 portions from the dough; roll out with mild dusting into an elongated oval shape roti. Keep these rotis thick. Prick the rotis using a fork to avoid puffing up while baking.
- Now brush water on each roti and drizzle chopped garlic and mozzarella.
- Remove hot tray from the oven carefully, place rotis on the tray, place the tray on 1st rack position and bake for 2 mins at 220°C.
- Remove the rotis as soon as the garlic & mozzarella browns, let them cool.
- Warm in the same oven for 3 mins, serve soft khameeri roti with hot stews or enjoys with any kebabs.
