Kaddu ki Sabji in Microwave

Servings: 4 portions
Ingredients:
- 750 gm pumpkin
- 1/4 cup olive oil
- 1 tbsp ginger, sliced
- A pinch of hing
- 1 tsp fenugreek seeds
- 1 tbsp salt (use sendha namak/rock salt if fasting)
- 1/2 tsp turmeric powder
- 1 tsp chilli powder
- 1 tbsp coriander powder
- 1 tsp garam masala
- 1 tbsp sugar
- 1 tbsp amchoor powder
- 1 tbsp chopped coriander leaves
- 4-5 green chillies (slit)
Preparation:
1. Wash and clean the pumpkin. Dice and keep aside. In a glass bowl, add water just enough to cover the pumpkin. Add ½ tsp salt and ¼ tsp turmeric to the water along with pumpkin. Heat at 100% micropower level for 10 min.
2. In another bowl, add olive oil, ginger, green chillies, fenugreek seeds and heat at 100% micropower level for 2 min. Now add hing and remaining powdered masalas; moisten the mixture with 100 ml water and heat at 100% micropower level for 2 min.
3. Add pumpkin, sugar and season well. Mix thoroughly and heat at 100% micropower level for 4 min.
4. Serve hot, garnished with coriander leaves.
