Ingredients:
- 1/2 cup broccoli stalks
- 1 cup broccoli florets
- 1/4 cup finely chopped onions
- 1 tsp finely chopped celery stems
- 1 tsp finely chopped garlic
- 1/2 tsp corn flour dissolved in 1 cup milk
- 3 cups vegetable stock
- Salt and freshly ground black pepper powder to taste
- 3 tbsp sliced almonds
For the Garnish:
- 4 tbsp fresh cream
Preparation:
- Combine the broccoli stalks and 3 cups of stock in a microwave safe bowl and cook for 6 mins at 100% micro power level, stirring once in between after 3 minutes (discard the broccoli stalks).
- In another bowl add the broccoli florets, onions, celery and garlic, mix well and cook for 12 mins at 100% micro power level, stirring every 2 mins.
- Keep aside to cool and blend it in a mixer to a smooth purée adding some broccoli stock.
- Transfer it to a microwave safe bowl and microwave on high for 3 mins, stirring once in between after 1 min.
- Add the corn flour-milk mixture, salt, pepper and almonds and cook for 5 mins at 100% micro power level, stirring once after 1 min.
- Serve immediately garnished with cream.
