Almond & Broccoli Soup in Microwave Oven

Cook temp: 100% Micro power level

Cook time: 25 mins

Ingredients:

  • 1/2 cup broccoli stalks
  • 1 cup broccoli florets
  • 1/4 cup finely chopped onions
  • 1 tsp finely chopped celery stems
  • 1 tsp finely chopped garlic
  • 1/2 tsp corn flour dissolved in 1 cup milk
  • 3 cups vegetable stock
  • Salt and freshly ground black pepper powder to taste
  • 3 tbsp sliced almonds

For the Garnish:

  • 4 tbsp fresh cream

 Preparation:

  1. Combine the broccoli stalks and 3 cups of stock in a microwave safe bowl and cook for 6 mins at 100% micro power level, stirring once in between after 3 minutes (discard the broccoli stalks).
  2. In another bowl add the broccoli florets, onions, celery and garlic, mix well and cook for 12 mins at 100% micro power level, stirring every 2 mins.
  3. Keep aside to cool and blend it in a mixer to a smooth purée adding some broccoli stock.
  4. Transfer it to a microwave safe bowl and microwave on high for 3 mins, stirring once in between after 1 min.
  5. Add the corn flour-milk mixture, salt, pepper and almonds and cook for 5 mins at 100% micro power level, stirring once after 1 min.
  6. Serve immediately garnished with cream.
