Ingredients:

For Dough:

  • 125gms refined flour
  • 5gm salt
  • 5gm butter
  • 5gm sugar
  • 5gms active dry yeast
  • 50 gms makai atta

Herb Seasoning:

  • 2 tbsp garlic granules
  • 1 tbsp ground black pepper
  • ½ tbsp dried oregano
  • ½ tablespoon dried basil
  • ¼ teaspoon dried rosemary
  • ½ tsp red chili flakes
  • ¾ tbsp salt

Preparation:

Herb Seasoning:

  1. Add all the ingredients into a mixing bowl. Mix and ensure it is well combined. Keep aside for later use

Bread Dough:

  1. In a large bowl mixing bowl, combine together flour, 2 tbsp of the oregano seasoning, sugar and yeast. Add all the milk and begin to knead the dough using your hands
  2. Knead the dough for 8-10 mins; ensure to knead the dough till it is soft and supple. When it is almost done, add minced garlic, melted butter and salt, and knead for 1-2 mins or until it has combined
  3. Add a little flour, if necessary, while kneading. The dough will seem sticky at first but will change texture as you knead it
  4. Once done, shape the dough into a large ball. Grease a bowl with oil. Place the dough in the bowl and turn it around so that it’s coated slightly with oil, cover it with a damp cloth and place it in a warm place to proof for 35 mins
  5. Remove the dough from the mixing bowl and divide it into two halves
  6. Select the program & preheat the oven to 180C
  7. Grease and line a baking tray with parchment paper. Sprinkle maize flour and Herb seasoning. Place the shaped dough on the tray over it. Sprinkle some more maize flour and oregano seasoning on top of the dough
  8. Brush it with cooled melted butter and sprinkle more seasoning or maize flour if necessary. Use a sharp knife and lightly mark straight lines along the bread for cutting after baking. Do not cut it all the way through before baking. Cover and allow proofing on the bench for 20 mins further
  9. Bake in a preheated oven for 25 mins or until the tops are golden brown. Brush with melted butter and serve hot with cheesy dip
