Chicken Cordon Bleu in Microwave

Ingredients:
- 4 nos skinless, boneless chicken breasts
- 4 thin slices chicken ham
- 4 cheese slice
- 3/4 cup dry breadcrumbs
- 1/4 cup finely chopped parsley
- 1 no egg
- 1/2 cup all-purpose flour
- 3 tbsp vegetable oil
- Salt to taste
- 2 tbsp black pepper
Preparation:
- Select bake program & pre quartz heat the oven at 190⁰C
- Wash chicken breasts, warp each breast with plastic wrap and pound with a rolling pin, until about ¼’’ thick. Season with salt & pepper
- Arrange chicken smooth side down on a work surface. Cover one half of each breast with one slice of chicken ham and one slice of cheese, leaving space around the edges. Fold breast in half over ham and cheese and press edges together to firmly seal
- Combine breadcrumbs, parsley, 1 tsp salt, and ½ tsp pepper in a shallow bowl. Whisk egg and 1 tbsp water in another shallow bowl. Spread flour on a plate
- First coat in flour, then dip in egg and finally in breadcrumb mixture
- Place the crumb coated chicken on a greased baking tray, leaving 1 inch gap
- Drizzle some oil oven the chicken breast and bake for 18 min on low rack. Turn the chicken after 11 mins apply oil on the top surface and continue baking
- Remove from the oven, slice and serve hot
