Baked Chicken Breast in Microwave Oven

  • 4 chicken breasts
  • 2 tsp olive oil



  • 1 tsp dried oregano/thyme
  • ¼ tsp garlic powder
  • ½ tsp each salt & pepper
  • 1½ tbsp brown sugar
  • 1 tsp paprika



  • Parsley, finely chopped
  • 1 roll butter paper



  1. Preheat oven to 200°C on convection mode. 
  1. Pound chicken to 0.6" at the thickest part using a meat mallet. This helps making chicken more tender. 
  1. Mix seasoning ingredients and keep aside. 
  1. Line tray with butter paper. Place chicken upside down on tray. Drizzle chicken with about 1 tsp oil. Rub over with fingers. Sprinkle with seasoning. 
  1. Flip chicken. Drizzle with 1 tsp oil, rub with fingers and sprinkle with seasoning, covering as much of the surface area as you can. 
  1. Bake for 25 mins at 180°C or until surface is golden. Remove from oven and immediately transfer chicken to serving plates. 
  1. Garnish with freshly chopped parsley and serve with mashed potatoes and glazed carrots.
