Culinary fusion is a magical place to experiment and play. The Dal Vada Burger is a delightful marriage of traditional Indian flavours and the iconic burger. You swap the potato tikki with a crunchy chana dal tikki, lettuce gets replaced by iron-rich spinach, and mayonnaise gives way to good old dahi. You’ll feel guilt-free when you feed this finger-licking snack to all you know. Each bite will surprise you as the freshness of spinach meets the wholesome spiced dal tikki before meshing with a yoghurt spread. And, for your Anglacised guests, you can serve it up as ‘Lentil Fritters in a Bun’ for a good laugh. However, they’ll likely never want a regular burger again!

Ingredients

  • 1 Cup Chana Dal soaked
  • 2 Green Chilies
  • 1 Sprig Curry Leaves
  • 1 tsp Cumin (Jeera)
  • Oil
  • Salt to taste
  • FOR BURGER:
  • 1 Cucumber
  • 1 Tomato
  • Curd for spread
  • 5 gms Spinach

Method

  • Coarsely grind the dal and add the other ingredients, combine it, and form small tikkis. Apply oil on the magic tawa and set the microwave in H2 mode.
  • Cook the tikkis for 14 minutes total; they need to be turned after 10 minutes.
  • Slit the bread and apply the curd on the base and then place the dal vada tikki place, the sliced tomato and cucumber, and blanched spinach on top.
  • Serve it with mint chutney and tomato ketchup.

Aloo Chaat

Aloo Chaat stands as a testament to the vibrancy and diversity of Indian cuisine. Born on the bustling streets of North India, especially Delhi, it’s now a staple across the country, celebrated for its bold flavours and textures. Fried or boiled potatoes are diced and tossed with a mix of spices, including chaat masala, red chilli powder, and cumin, along with tangy tamarind sauce and a squeeze of fresh lemon juice. This blend imparts a mouth-watering taste and offers a delightful contrast of textures, from the crispy potatoes to the soft, juicy bursts of the pomegranate-seed garnish. Spicy, tangy, sweet, and savoury all at once, this versatile dish can be a snack, appetiser, or even a light meal, reflecting the ingenuity of Indian street food culture where everyday ingredients are transformed into something extraordinary.
