Tomato Basil Soup

The simple tomato basil soup may appear plain in comparison, but here’s some food for thought (pun intended). On a cold night, it’s the simple things that form the heart of homely goodness. Ingredients
  • 2 Cans Diced Tomatoes                    
  • 1 Cup Vegetable Broth                        
  • 1/4 Cup Fresh Basil Leaves, chopped            
  • 1/4 Cup Heavy Cream                              
  • Salt and pepper to taste
Method
  • In a blender, combine the diced tomatoes (including the liquid) and vegetable broth. Blend until smooth.
  • Pour the tomato mixture into a microwave safe glass bowl andcook for 3 min at 50% micro power level.
  • Stir in the chopped basil leaves and simmer for about 5 minutes at 50% micro power level.
  • Remove the pot from the heat and stir in the heavy cream. Season with salt and pepper to taste.
  • Serve hot and garnish with additional basil leaves if desired.
