In the late 1800s, a recipe for tomato soup turned up in the cookbook of one Eliza Leslie. Hence, before you take a sip of your next Tomato Basil soup fix, pause a moment and give thanks. Nothing exudes a warm, cosy feeling like this deep-red, aromatic soup in which less is more. In a world that is all about more bang for your buck, food is now all about layered flavours and fancy combinations. The simple tomato basil soup may appear plain in comparison, but here’s some food for thought (pun intended). On a cold night, it’s the simple things that form the heart of homely goodness. So, slurp deep from this cup of goodness, coz baby, it’s cold outside.

Ingredients

  • 2 Cans Diced Tomatoes                    
  • 1 Cup Vegetable Broth                        
  • 1/4 Cup Fresh Basil Leaves, chopped            
  • 1/4 Cup Heavy Cream                              
  • Salt and pepper to taste

Method

  • In a blender, combine the diced tomatoes (including the liquid) and vegetable broth. Blend until smooth.
  • Pour the tomato mixture into a microwave safe glass bowl andcook for 3 min at 50% micro power level.
  • Stir in the chopped basil leaves and simmer for about 5 minutes at 50% micro power level.
  • Remove the pot from the heat and stir in the heavy cream. Season with salt and pepper to taste.
  • Serve hot and garnish with additional basil leaves if desired.
