Strawberry Palmiers are a beautiful balance of simplicity and indulgence. Delicate layers of puff pastry are brushed with butter, spread with strawberry jam, and dusted with sugar before being folded into their signature heart shape. As they bake, the sugar caramelises into a golden, crisp coating while the pastry turns light and flaky. Finished with a dusting of icing sugar or a drizzle of white chocolate, these charming treats offer sweetness, crunch, and a touch of elegance in every bite.

Ingredients

  • Puff pastry sheet (butter-based, all-butter preferred)
  • Strawberry jam or coulis (low sugar, high fruit %)
  • Castor sugar – 3–4 tbsp
  • Butter (melted) – 1 tbsp
  • Optional finish:
  • White chocolate drizzle
  • Icing sugar for dusting

Method

  • Roll puff pastry to ~3 mm thickness. Lightly brush with melted butter.
  • Spread a thin, even layer of strawberry jam. Sprinkle castor sugar.
  • Fold both long sides inward to meet at the center.
  • Chill 15–20 minutes (critical for clean slicing). Cut into 1–1.2 cm slices.
  • Gently press the center to accentuate the heart shape.
  • Bake at 190°C (convection) 18 minutes; flip halfway, if required, for even caramelisation. Cool on rack.
  • Optional: Dust icing sugar or drizzle white chocolate.
