Ingredients
  • 4  Leeks, white and light green parts only, sliced
  • 4 Potatoes, peeled and diced
  • 4 Cups Vegetable Broth                                              
  • ½ Cup Heavy Cream                                                    
  • Chives, chopped (for garnish)
Method
  • In a saucepan, sauté the leeks in a bit of olive oil until softened for 2 minutes.
  • Add the diced potatoes and vegetable broth to the pot and cook for 5 minutes.
  • Use a blender to puree the soup until smooth.
  • Stir in the heavy cream and season with salt and pepper to taste.
  • Simmer for 5 minutes until warmed through, then serve garnished with chopped chives.
