Don’t let the simplicity of this recipe deceive you, for magic abounds when mil baithe teen yaar - rice, garlic, and lemon. Each grain tells a tale of lip-smacking citrus and garlic delight. When the three decided to twist and shout in a sizzling pan, the evergreen favourite Lemon Garlic Rice was born. Pair it with grilled or roasted chicken to complement the savoury and juicy flavour, or with pan-seared fish or curry to enjoy the tanginess balancing the natural sweetness of seafood. It just as easily enhances the earthy notes of grilled and wok-tossed vegetables. And for a taste of home, scoop some chilled, creamy curd on top and eat with roasted papad.

Ingredients

  • 1 Cup Basmati Rice (washed)
  • 2 Cups Hot Water
  • 2 Garlic Cloves, minced
  • Juice of 1 lemon
  • 2 tbsp Olive Oil 

Method

  • In a microwave-safe glass bowl, heat olive oil for 3 mins at 100% micropower level.
  • Add minced garlic and sauté for a minute until fragrant at 100% micropower level.
  • Add soaked rice to the above bowl and mix well.
  • Pour in hot water and lemon juice. Heat the rice for 10 minutes at 100% micropower level.
  • Remove from heat and let it sit, covered, for 8 minutes. Fluff with a fork before serving.
