Ingredients
- 15 Chicken Wings For Marinade
- 1 tbsp Ginger Garlic Paste
- 2 tsp Kashmiri Red Chilli Paste
- ½ tsp Green Chilli Paste
- Buttermilk
- 1 tbsp Soy Sauce
- 1 tbsp Red Chilli Sauce
- ½ tsp Black Pepper
- ½ tsp Salt
- 2 Eggs
- Salt to taste
Method
- Start by preparing the chicken wings. Cut the wings into lollipops by separating the meat from the bone.
- To do this, push the meat down to one end of the wing bone, making it resemble a lollipop shape.
- In a mixing bowl, combine the chicken lollipops with all marinade ingredients. Mix well and let them marinate for about 30 minutes.
- This can be refrigerated overnight for even better flavour.
- On moderately low flame, Heat oil in a kadhai. Once the oil is heated, add chicken lollipops and fry them until golden brown and crispy. This should take about 10 minutes. Ensure the chicken is cooked from the inside as well. Avoid very hot oil.
- Remove the chicken lollipops from the oil and place them on paper towels to remove excess oil.
- Serve the chicken lollipops hot, garnished with chopped fresh spring onion greens, accompanied with sweet chilli sauce.
