Ingredients

  • 500g ground chicken
  • 1 small onion, finely grated or minced
  • 2 garlic cloves, minced
  • 1 green chili, finely chopped (optional, for a kick)
  • 2 tbsp fresh coriander or parsley, chopped
  • 1 tsp paprika or Kashmiri chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp black pepper
  • 1 tsp salt (adjust to taste)
  • 1 tbsp Dijon mustard or regular mustard
  • 1/4 cup breadcrumbs (panko preferred) or crushed oats
  • 1 egg (for binding)
  • 1 tbsp oil (in mixture for juiciness)
  • 1 tsp Worcestershire sauce
  • 1/4 cup grated cheddar cheese (mixed into the patty)

Method

  • In a large bowl, combine all ingredients. Use your hands or a spatula to gently mix until just combined. Do not overwork the meat.
  • Divide the mix into 4 equal portions. Flatten into round patties about 1.5 cm thick. (Make a slight dent in the center so they cook evenly and don’t puff up.)
  • Chill the patties for 15–30 minutes to help them firm up and hold shape while cooking.
  • Heat oil in a non-stick pan over medium heat. Cook patties (both sides) for about 15 minutes until golden and cooked through. While the pattie cooks, toast the bun lightly, spread with mayo, add fresh tomato and lettuce.
  • Once properly cooked, reduce flame and place a cheese slice over the hot pattie. Cover and cook for 3 minutes until the cheese melts.
  • Layer the pattie over the lettuce. You can also add a fried egg for a gourmet twist.
