Sweet stuffed rice crepes from Malabar

Ingredients

      For the pancake:

  • Maida – 1 cup
  • Baking powder – a pinch
  • Ghee
  • Eggs – half an eggs
  • Salt - to taste
  • For the filling:
  • Eggs 3
  • Raisins
  • Chopped nuts
  • Sugar 4 teaspoon
  • Cardamom
  • Nutmeg powder

Method

  • Mix all the ingredients for the pancake and make a runny pancake batter and pour out pancakes in a non-stick pan
  • In the meantime, break open the 4 eggs and mix it with sugar, beat well, and make a scrambled egg prep (need to be dry)
  • Fill the pancake with scrambled egg filling while the pancake is hot. Fold the crepe into a box and take it out.
  • Then heat the pan with ghee once again and shallow fry the box prepared in the previous step for a few seconds on both the sides.
  • Garnish with nuts.
