Eggs in Clouds present an enchanting twist on the classic way to enjoy eggs. Eggs are carefully separated, with the whites beaten to a soft, cloud-like consistency, and then gently folded with a mixture of cheddar cheese, spring onions, and finely chopped steamed chicken sausages. These form the perfect ‘clouds’ on which the yolks are nestled before the dish is finished in the oven. The yolks cook just until they're perfectly warm and slightly runny, with a sprinkle of pepper to add the right touch of spice. Ingredients

  • 2 Eggs
  • ¼ cup Cheddar Cheese, shredded
  • ¼ cup Spring Onion, chopped
  • 2 Steamed chicken sausages, chopped
  • Pepper to taste

Method

  • Separate the egg yolks and whites, putting the whites in a large bowl and the yolks in a separate bowl.
  • Whip the whites until stiff peaks form.
  • Carefully fold in the cheese, spring onion and chopped chicken sausages.
  • Grease the tawa and preheat at 200°C on low rack.
  • Add 2 tbsps of whipped egg whites on parchment paper; make a deep well in the center of each with the back of a spoon.
  • Place the parchment paper on preheated tawa. Bake for 3 minutes at 200°C
  • Add one yolk to each well and season with pepper and Continue to bake at 200°C for 4 minutes for a soft egg yolk.
