Kharvas is a delicate steamed milk dessert cherished for its silky texture and gentle sweetness. This simple preparation blends milk, yogurt, and condensed milk into a smooth mixture, delicately scented with saffron and cardamom. Steamed slowly until just set, it develops a soft, custard-like consistency that melts effortlessly on the palate. Chilled before serving and garnished with chopped nuts, every spoonful offers a harmonious balance of creamy richness and fragrant spice. Light yet indulgent, Kharvas is a timeless dessert that brings comfort and elegance to any occasion.

Ingredients

  • 400g sweetened condensed milk
  • 400g thick yogurt
  • 400ml full fat milk
  • A few strands saffron
  • 1-2 tsp Cardamom powder
  • A few pistachios & almonds for garnish
  • Ghee for greasing

Method

  • In a large bowl whisk together condensed milk. Yogurt, and milk, Ensure there are no lumps.
  • Add half saffron, half cardamom powder and mix well.
  • Grease a steaming vessel or small individual bowls with ghee. Pour the prepared milk mixture into the greased bowls or vessel. Garnish with rest of saffron and cardamom.
  • Place the bowl or vessel on the glass tray at low rack position. Select steam function, then S1 mode and set time for 40-45 minutes (the exact time may vary depending on the thickness of the mixture and the size of the bowls).
  • Check for the doneness by inserting a tooth pick or knife into centre of the kharwas. It should come out clean.
  • Once cooked, remove from the oven and let it cool completely to room temperature.
  • Chill the kharwas for 2 – 3 hours before serving.
  • Run a knife around the edge to loosen the kharvas, Invert the bowl onto a serving dish to unmold.
  • Garnish with chopped nuts and serve chilled.
