Healthy Banana Oatmeal Pancakes

Ingredients:

  • 2 eggs
  • 1 egg white
  • 2 tsp baking powder
  • 1 banana
  • ½ tsp salt
  • 1 tsp vanilla
  • 1½ cups oats
  • 2 tbsp maple syrup
  • 3½ cups almond milk


Preparation

  • In a blender, pour in almond milk, eggs, egg whites, banana, maple syrup, vanilla, rolled oats, baking powder and salt.
  • Blend until smooth.
  • Lightly grease the Magic Tawa with butter and Pre-Heat in Microwave Oven using OFC mode on H2 setting.
  • Pour pancake batter onto the Magic Tawa.
  • Cook for 3 mins on one side; turn over and cook for another 2 mins.
  • Drizzle with maple syrup and toppings of choice.

Maha Shivratri special: Yam Patties

Ingredients:

  • ½ tsp lemon juice
  • ½ tsp green chilli paste
  • 1 tsp chaat masala
  • 1 tsp ginger paste
  • ¼ tsp garam masala
  • ½ tsp red chilli masala
  • ½ tsp amchur powder
  • ½ tsp sendha namak
  • 1 tsp roasted cumin
  • 2 tbsp arrowroot flour
  • 300 gm yam


Preparation

  • Wash the yam. Peel and dice.
  • Put diced pieces in a bowl with lemon juice and 500 ml water.
  • Cook at 100% Micro power level for 10 mins.
  • Mash the diced yam well.
  • Add the other ingredients and mix well.
  • Shape into medium-sized patties.
  • Grease the tawa with oil; pre-heat in H2 setting of OFC mode.
  • Arrange the patties on the tawa and continue cooking for 8 mins.
  • Turn the patties, brush with oil and continue cooking for 4 mins.
  • Garnish with coriander leaves.
  • Serve Yam Patties with coriander chutney and curd.

Chocolate Rocks

Ingredients:

  • 25 gm cashew nuts
  • 25 gm almonds
  • 25 gm pistachio
  • 25 gm raisins
  • 25 gm blueberry
  • 25 gm salted peanuts
  • 25 gm cornflakes
  • 250 gm dark chocolate


Preparation

  • Take cashew nuts, almonds, pistachios, peanuts and chop them.
  • Add crushed cornflakes, berries and raisins and keep aside.
  • Chop chocolate slab into small pieces and place in a microwave-safe glass bowl and melt at 100% micro power level for 3 mins.
  • Combine the molten chocolate with the nuts mixture and mix well.
  • Place a spoonful of mixture on the tray and refrigerate for 15 mins.
  • Wrap the chocolate rocks individually and decorate as desired.

White Chocolate Brownie

Ingredients:

  • ½ cup milk (optional)
  • 100 gm flour
  • 150 gm butter
  • 200 gm powdered sugar
  • 150 gm white chocolate
  • 50 gm walnuts
  • 4 eggs
  • ½ tsp vanilla essence
  • ¼ tsp baking powder


Preparation

  • Grease and dust the baking tray.
  • In a glass bowl, mix butter and powdered sugar.
  • Add lightly beaten eggs and vanilla essence.
  • Add melted chocolate and fold this batter with refined flour, baking powder and walnuts.
  • Bake at 180° for 30 min in Convection mode.
